All our products are manufactured using traditional methods, but quality has always been the most important thing for us. We therefore use only natural spices for our products, which are still massaged in by hand, and for smoking we use beech wood, which is particularly low in resin.
Our recipes for the spice mixtures are a well-kept secret that has been passed down for generations.

Fruity, crispy, simply delicious.
FROM SAVOURY TO SWEET NOTES
Elderberry, raspberry and apple juice are perfect matches for speck, ham and smoked sausages for your snack. They complement our salty, flavoursome meat specialities with a delicate sweet note that enhances your taste experience. It is well known that a pinch of sugar is a perfect match for salt and vice versa. At Mendelspeck, we don’t need to be told twice! Furthermore, brittle bread, jams and dumplings should always be on your menu.
Syrup
Our syrup is produced by partner farms using fresh South Tyrolean berries and blossoms. Traditionally, we use wild elderberry flowers and premium raspberries to make our syrup. Due to cultivation at high South Tyrolean altitudes, the fruit acquires an excellent aroma that infuses the syrup. In the interests of environmental protection, the syrup is bottled in glass instead of plastic. It also allows us to guarantee the quality of the syrup when it reaches the customer.
Apple juice
Our apple juice is made from mountain apples and strawberries from high South Tyrolean altitudes. The excellent climate conditions ensure a particularly pronounced fruit aroma, which results in a delicious apple juice. Our cloudy apple juice consists of 80% apple juice and 20% strawberry juice. It is bottled in green glass bottles appropriate for a light-sensitive fruit juice.
Jam
What would bread and butter be without some fruit jam?
It’s not worth thinking about. Fresh berries are cultivated directly on the farm, harvested by hand and processed into first-class jam. The special taste of the berries is owed to the high-altitude farms. Our fruit jams are ideal as a sweet spread or combined with cheese and cold cuts.
Knödel (Dumplings)
Speck and cheese dumplings are traditional South Tyrolean dishes that can be served in many different ways. The South Tyrolean speck dumpling has its origins as early as the 13th century on the high-altitude farms and alpine pastures.
Later, speck and cheese dumplings established themselves as a traditional dish and dumplings were prepared in increasing varieties. Today we enjoy the round culinary delights both savoury (with cheese, beetroot, spinach…) and sweet (with nougat, fruit, cottage cheese…).
